A guide to a healthy Paris à la day in the life of the cult-favourite Ici-Selfcare's Sam Guelimi, available both as told in the native tongue & translated by yours truly . . .


Morning Routine
FR| Embrasser mon fils  et lui dire des choses excessivement tendres alors qu'il est endormi. ( mon mari déteste ça . Peut être est il jaloux car il n'y a pas si longtemps c'est à lui que je murmurais pendant son sommeil!)
Puis j'arrive chez Glowing Café, où je partage un super latté avec Anne-Stephanie Robert mon bras droit.  Les lattés que je nous prépare seraient invendables tant j'utilise d'herbes et les meilleures choses possibles... Aucun latté sans une base de beurre de coco de chez Cap Beauty et deux cuillères de Tocos . . . 

Les jours les plus équilibrés commencent par un cours de yoga avec Tatiana, après lequel je nous prépare un latté. Pas avant , car ils sont si gourmands ( tout en étant healing) qu'ils la mettent d'humeur bavarde et elle ne veut plus pratiquer! Surtout quand c est un hot chocolate . ( dans lequel je cache reishichaga...chut!)

EN | I wake my son up with kisses as I tenderly to speak to him while he's still asleep. My husband doesn't like this, perhaps because he's jealous that I used to instead do this to him not too long ago! Then I go over to Glowing Café, where I sip on a super latté with my right-hand Anne-Stephanie Robert. We couldn't sell the latté we regularly consume in the morning considering that I use many herbs and the best of them . . . And no latté is complete without the base of coconut butter from CAP Beauty & two generous spoons of Sun Potion's Tocos

I believe that the most balanced days for me begin when I can take a yoga class with Tatiana, after which I prepare us a latté. I don't prepare it beforehand because the herbs put her in such a chipper and chatty mood that she does not want to practise anymore! This is especially the case with my hot chocolate, discreetly prepared with reishi and chaga—hush!

Yoga 
FR | TATIANA AVILA-BOURU est devenue mon amie . J'étais au départ son élève et lorsque j'ai ouvert Ici-Selfcare je lui ai proposé d'enseigner. Dans cette aventure , elle me soutient au quotidien et me conseille bien souvent. Mais j'aime aussi les cours d'ALEXANDRA SAJKO, qui nourissent l'énergie feminine. Elle est aussi psychologue donc a tendance à choisir les bons mots ! GEMMA VASSALLO (ici) est trés féminine, aux mouvements fluides, gracieux comme l'indique son "Liquid flow". Mais tous les autres professeurs sont excellents, j ai d'abord été leur élève avant de leur ouvrir les portes de Ici-Selfcare. 

EN | TATIANA AVILA-BOURU has become my best friend. I was initially her student and when I opened Ici-Selfcare, I asked her to teach there. She support me on a daily basis in this venture, giving me regular advice and feedback. I also enjoy the classes of ALEXANDRA SAJKO, who has a very nurturing feminine energy. She is also a psychologist so she has a very intricate way with words! GEMMA VASSALLO (here) is also very feminine with very fluid, graceful movement through her practise of Liquid Flow. All the teachers are excellent though as I was their student before opening the doors of Ici-Selfcare.

Dine
FR | Je suis une fan de YEN, un restaurant où le chef propose des handmade sobas noodles , dont il  prépare la pate  sous nos yeux. Je les choisis aux girolles ou aux poireaux japonais. 
Il m'arrive de diner à la CLOSERIE DES LILAS. Pas ma cuisine préférée, mais un lieu qui garde les traces de son histoire liée à celles des écrivains qui fréquentaient le lieu... 

EN | I am a fan of YEN, a restaurant where the chef makes handmade soba noodles with the dough prepared right before your eyes! I have them with chanterelles or Japanese leeks. I also sometimes dine at CLOSERIE DES LILAS which despite its menu to which I am impartial, has a history of frequenting writers & artists I appreciate.

Salon de Thé 
FR | Ah je vous ai répondu précedemment : TORAYA. Je choisis un matcha glacé et un petit bol de riz brun aux champignons. Les serveuses sont adorables, si bien que l'une est devenue une amie. 
MARIAGES FRÈRES Leurs thés aux noms merveilleux. L'équipe : tous les jeunes hommes aux physiques de dandy! 

EN | My immediate response is TORAYA, where I enjoy an ice cold matcha and a small bowl of brown rice with mushrooms. The waitresses are adorable, so much so that one of them has even become a friend of mine! MARIAGES FRÈRES also is a place that has teas with marvelous names and the servers are all handsome young men with such fine physique!

Juice Bar
FR | Evidemment je vais répondre Glowing Café ou Glow on the go! que j'ai crée pour y trouver ce que j'aime . 
Mais je déjeune volontiers chez TORAYA, un salon de thé japonais. 

EN | Of course I must answer this with GLOWING CAFÉ or GLOW ON THE GO! I created it because there wasn't anywhere like it and I wanted to have a place for the nourishment I like. Yet, I also enjoy lunch at the above-mentioned Japanese tea room, TORAYA.

Bookstore & On the Nightstand
FR |  L'Acheter un livre et boire un thé au CAFÉ DE FLORE. Voilà quelque chose qui me rend immédiatement heureuse depuis plus de 14 ans. Je suis une provinciale du Sud de la France! L'ÉCUME DES PAGES vend aussi les livres que je crée pour ma maison d'Edition Edwarda. 

Je lis comme je me nourris. Plein de petits repas tout au long de la journée. D'abord les textes que j'initie pour ma Collection Edwarda (comme le dernier autour d'une photo de Marilyn Monroe , sur le tournage de Misfits. il s'agit avant tout d'un livre sur la solitude, celle que chacun de nous porte en soi). Je viens de finir un livre de NICOLAS GRIMALDI sur La jalousie chez Marcel Proust. Beaucoup de litterature classique , de la philosophie et de la poésie. Voila comment je me construis ( ou me simplifie ) jour après jour . . .

EN | I recommend buying a book and drinking tea at CAFÉ DE FLORE. This is something that has brought me immediate happiness for over fourteen years. I am a provincial of the South of France! LÉCUME DES PAGES also sells copies of my creations for Edition Edwarda. I eat as I read: full of small meals throughout the day. First, the collection of texts I have compiled for Collection Edwarda, like the last one on a photograph of Marilyn Monroe on the filming of Misfits. Above all, it's a text on the solitude we all carry within ourselves. I have just finished reading a book by NICOLAS GRIMALDI. I enjoy a lot of classical literature, philosophy, and poetry—it's how I build or rather unravel myself, day after day . . .

Nightcap Latté 
In a high speed blender, blend one cup of warm water with one teaspoon each of rose water, CAP Beauty coconut butter, Moon Deli Calming Adaptogen or Sun Potion ashwagandha, and raw honey with a quarter teaspoon of royal jelly powder

BEAUTY BITES: ALLERGEN-FREE QUESO DIP


B E A U T Y   B I T E S  |  A L L E R G E N - F R E E   Q U E S O  D I P
A cheese sauce that is top allergen-free, vegan, and autoimmune-friendly to top your chips & taco bowl dreams . . .

I N G R E D I E N T S
4 cups cauliflower florets or yucca root, cut into small cubes
1/2 cup white sweet potato or carrots, cut into small cubes
1/2 cup coconut milk
1/2 cup broth, vegetable for a completely vegan option or bone broth
2 tablespoons avocado oil
1 tablespoon cassava flour, optional but renders a thicker sauce
2 tablespoons nutritional yeast, you may omit as I did above but this renders the dip with the focal, deeper cheesy flavour
1 teaspoon Pink, Real, or Sea Salt
1/2 teaspoon garlic or onion powder, I prefer this brand as it's certified gluten-free which many companies aren't and avoids cross-contamination risks

D I R E C T I O N S
I. Bring a pot with water to a boil. In the meantime, cut up your selected vegetables. Steam the vegetables until tender in a steamer atop the pot.
II. Place the vegetables and the remaining ingredients in a high-speed blender then blend until a liquid consistency is reached. If you're adding the cassava flour, add it in now.
It keeps in the refrigerator for up to a week. When ready to re-serve, simply heat it up as it has a tendency to dry out, similar to its inspiration of queso dip.


S U G G E S T I O N S | Top the suggested quick dishes below with the queso dip . . .

Baked Sweet Potato orange, white, or purple sweet potato topped with finely-chopped chives, and crumbled pasture-raised bacon Taco Salad finely-shredded lacinato kale or iceberg lettuce, finely-shredded purple cabbage, cashews roasted with lime, chopped sweet onion, half an avocado, and pasture-raised chorizo Coconut Chips with autoimmune-friendly Real Coconut Chips, finely-chopped parsley, and finely-chopped red onions Yucca Tostada a toasted yucan crunch topped generously with sliced avocado, shredded roasted chicken, roasted lime cashews, and cilantro mojo—recipe below

Cilantro Mojo
Combine 3/4 cup extra-virgin olive oil with 1 cup of chopped cilantro, 4 garlic cloves, juice of one lime, and two tablespoons of apple cider vinegar. If you're not following the autoimmune protocol, add 1 serrano chile. Blend on high and keep in the refrigerator for up to two weeks.
