Creamy Adaptogenic Chia Pudding

Despite its ludicrous popularity, many people have issues with chia seeds. For some, it's the texture, for others its bemusing Twizzlers-esque tastelessness, and for others, digestive distress. Chia seeds are high in fiber and are absorbent, much like coconut flour. For those who have sluggish digestion or are not adequately hydrated, chia seeds can actually be detrimental and off-putting.

 

 In comes this adaptogenic & digestive creamy chia pudding. For texture non-enthusiasts, this chia pudding is whipped up in the blender to actually be a pillowy pudding. For those who experience stomach upset, blending it allows for easier digestion. 

 

I also highly recommend adding this prebiotic powder by my ever-wise herbalist friend Lauren of Wooden Spoon Herbs. It's a blend of prebiotic roots that feed the gut micro-biome, priming them to absorb the probiotics. Burdock root also aids in detoxifying the liver which can be taxed with the well-deserved Holiday indulgences & increased stress. Marshmallow root soothes the digestive tract while Elecampagne stimulates the digestive enzymes, easing food through.

 

The addition of Tocos provides an even smoother texture reminiscent of a whipped Neopolitan ice cream sans strawberry, of course.

Ingredients

3/4 cup plant-based milk, I prefer this BPA-free coconut milk

2 tablespoons chia seeds

3 tablespoons cacao powder or rosy cacao or cacao magic

1 tablespoon Tocos

1 teaspoon raw coconut sugar or 2 medjool dates or raw honey or stevia to taste

1 teaspoon reishi * or, for a more chocolatey medicinal mushroom addition, this Adaptogenic blend
1/8 teaspoon vanilla powder


*The reishi will counteract the energy that cacao naturally provides with its low dose of caffeine

 

 

Directions

 

I. Place all the ingredients in a high-speed blender, like Vitamix to blend until smooth.

II. Taste test it & feel free to add more cacao or sweeten more according to what suits you!

III. Top it with a sprinkling of crushed nuts, such as raw almonds, dried rose petals, and more Tocos. You may eat it immediately but refrigerating for at least an hour cools it down & heightens the flavours.
